#1. Cabbage and apple salad

Time:- Nil.

Serves:- 4.

For the dill dressing :-

1). 1 tbsp chopped dill leaves

2). ¼ cup hung low fat curds

3). 2 tsp low fat milk

4). ½ tsp sugar

5). Salt to taste .

Other ingredients:-

1). 2 cups shredded cabbage

2). 2 tbsp chopped celery

3). 2 cups apple cubes

4). Salt to taste

How to make:-

1. Put the cabbage and celery in a vesselful of ice cold water for half an hour. This will make them crisp.

2. Drain and add the apple, salt and the dressing.

3. Toss gently and serve immediately.

#2. Summer salad.

Preparation time:- 15 minutes

Cooking time:- Nil 

Serve:-4 

For the ginger dressing:-

1). ½ tsp grated ginger

2). 2 tsp lemon juice

3). 1 tsp honey

4). 1 tbsp low fat curds

5). 1 tbsp milk powder

Salt to taste

Other ingredients:-

1). 2 cups watermelon cubes

2). 1 cup pineapple cubes

3). 1 cup cooked sweet corn kernels

4). Cup cucumber cubes.

5). 2 tbsp grated carrots for the garnish.

Salt to taste..

For the ginger dressing:- Combine all the ingredients together in bowl and whisk well. Refrigerate to chill.

How to make:-

1). Combine the watermelon, pineapple,corn, cucumber and salt together in a serving bowl and mix well. Refrigerate to chil.

2). Just before serving, pour the dressing over it and toss gently. Serve immediately garnished without carrots.

For the basil dressing:-

1). ¼ cup thick hung low fat curds

2). 1 tbsp low fat cream /milk

3). ½ tsp finely chopped lemon rind

4). 1 tbsp chopped basil

5). 2 tbsp grated apples

6). A pinch of sugar

7). A pinch of mustard

Salt and freshly crushed pepper to taste..

Other ingredients:-

1). 2 cups shredded cabbage

2). 1 tsp chopped celery

3). 1 cup green grapes, cut into halves

4). ½ cup cucumber cubes

Salt to taste

For the basil dressing:-

Combine all the ingredients together in a bowl till smooth. Refrigerate to chill.

How to make:-

1. Put the cabbage and celery in ice-cold water for half an hour.

2. Drain, wrap in a Muslim cloth and refrigerate till ready to serve.

3. Combine the grapes and cucumber in a bowl and refrigerate to chill.

4. To serve, add the cabbage and celery to the bowl containing grapes and cucumbers.

5. Sprinkler salt over it, add the dressing and toss well.

Serve immediately.

Cooking time:- Nil 

Serves:-4

For the salsa dressing:-

½ cup finely chopped tomatoes

1 tsp sugar

½ tsp Oregano

1 tbsp chopped green chillies

Other ingredients:- 

½ cup Blanched French bean, cut into 25 mm.

½ cup Blanched baby corn, cut into roundels

½ cup Blanched carrot cubes

½ cup cauliflower florets

1 cup boiled penne

1 tomato, deseeded and cut into cubes

Salt to taste

For the salsa dressing:-

Combine all the ingredients in a bowl and mix well while mashing continuously with the back of a spoon. Continue this for 4 to 5 minutes. Keep aside.

How to make:-

1. Put all the ingredients, except the salt, in a vesselful of ice-cold water for half an hour.

2. Drain , wrap in a Muslin cloth and refrigerate till ready to serve.

3. To serve, put all the ingredients in a bowl and sprinkle salt on top.

4. Add the salsa dressing over it and toss well.

Serve immediately..

For the mango dressing

¼ cup Mango pulp

⅓ cup low fat curds

2 tbsp low fat cream

¼ tsp cardamom powder a pinch dry red chilli powder.

Salt and freshly crushed pepper to taste.

Other ingredients:-

1 cup apple cubes

2 cups watermelon cubes, deseeded

1 cup green grapes, halved

1 cup torn lettuce

For the Mango dressing:-

1. Blend all the ingredients together in a mixer along till smooth.

2. Refrigerate to chill.

How to make:-

1. combine the apples, watermelon and grapes together in a bowl and refrigerate to chill..

2. Put the lettuce in a vesselful of ice-cold water helf an hour.

3. Drain, wrap in a Muslin cloth and refrigerate till ready to serve.

4. To serve, arrange the apple, watermelon and grapes in a serving bowl surrounded with lettuce.

5. Pour half the dressing on the side along the rim of the bowl and serve chilled with the remaining dressing on the side in a small bowl.
